Rose Quimby, also known as Daisy Quimby, is mother of Mayor Joe Quimby and matriarch of the Quimby family.
History
She attended the wedding of Rainier Wolfcastle and Maria Shriver-Kennedy Quimby.[1]

When Bart Simpson cuts class, he sneaks into Freddy Quimby's 18th birthday party at the Quimby Compound. Mayor Quimby introduces Bart to her.[2]
Behind the Laughter
As the Quimby family is a parody of the Kennedy family, an American political dynasty, Rose Quimby parodies the Kennedy family matriarch Rose Kennedy. In The Simpsons: A Complete Guide to Our Favorite Family, Rose Quimby is referred to as "Benefactor: Daisy, the never-seen Quimby matriarch."
